The Food Allergen Management Symposium (FAMS) 2025 was held from 20–22 May at the Novotel Sydney Olympic Park, NSW. Organised by Iceberg Events, the symposium brought together professionals from a diverse range of fields including food technology, hospitality procurement, kitchen supervision, food safety enforcement and regulation, as well as health specialists such as clinicians, general practitioners, allergists, dietitians, and nurses.

The event attracted delegates, speakers, and sponsors from across Australia and around the world, with international participation from New Zealand, Greece, Japan, Germany, the United Kingdom, South Africa, the Netherlands, and Italy.

Across the three-day program, the symposium featured three hands-on workshops and 25 technical presentations, providing attendees with valuable insights and opportunities for connection and professional development.

Iceberg Events managed all aspects of the symposium’s organisation, contributing to the overall success of this vibrant and well-attended event.

Biggest Challenge: 

Flooding across northern New South Wales impacted travel plans for several attendees and one presenter. Despite these challenges, the symposium team acted swiftly to communicate with affected delegates and presenters to explore alternative arrangements. In most cases, participants were able to nominate a colleague to attend in their place, and the impacted presenter successfully arranged for a substitute to deliver their research on their behalf.

Event Highlights:

1. The Symposium Dinner held at Watersedge at Campbell’s Stores offered stunning views of the Sydney Opera House. For a number of international guests this was their first time travelling to Sydney and their only opportunity to see Sydney Harbour.  
2. The symposium welcomed delegates, speakers, and sponsors from across the globe, contributing to a rich exchange of ideas, international perspectives and connection around the world.
3. Delegates were surprised with packets of gluten free Tim Tams generously provided by Arnott’s representatives who referenced the biscuits within their presentation.
